Arrive in Mexico City and settle into Casa Polanco before joining Chef Alfredo Chávez for a private dinner in his home. Across six courses paired with mezcal and tequila, discover pre-Hispanic ingredients and regional cooking traditions, spotlighting ingredients native to Mexico and focused on thoughtful sourcing. Watch Alfredo demonstrate preparation and plating techniques, ask questions as he cooks and, if you wish, join him in the kitchen before sitting down to taste the results. Overnight: Casa Polanco
